Chai Banana Bread Recipe
Ingredients:
Spice Blend:
Either use 2 tablespoons of The Republic of Tea’s Tablespoon Chai® Concentrate or make your own dry chai spice blend with the ingredients below
- ¾ teaspoon ground cardamom
- ½ teaspoon cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice
- ¼ teaspoon ground black pepper
Banana Bread:
- 1 ¾ cups all-purpose flour
- 1 ½ teaspoons of baking powder
- ½ teaspoon salt
- ¾ cup white sugar
- ½ cup greek yogurt
- 2 eggs
- 2 teaspoons vanilla extract
- ¾ cup mashed bananas (about 1 ½ - 2 medium bananas)
Directions:
1. Preheat the oven to 350°F and pregrease a 9x5 loaf pan.
2. In a medium bowl mix flour, baking powder, salt and chai spice blend (if you are using the dry spice blend) until well combined.
3. In a separate medium bowl mix together sugar, greek yogurt, vanilla extract and eggs until they are light and fluffy. Then add mashed bananas and Tablespoon Chai Concentrate (if you are opting for the easy chai concentrate option) and stir until combined.
4. Add dry mixture to wet batter and mix until no pockets of dry ingredients remain.
5. Pour batter into your prepared loaf pan and bake for 45-60 minutes – until a toothpick inserted in the center of the loaf comes out clean.
6. When you remove the loaf from the oven, let it rest in its pan for 10 minutes before turning it out to cool completely on a wire rack.
